TUSCAN VINSANTO
The Tuscan trebbiano, Chianti Malvasia, the Sancolombano are the vines for the vinsanto. When grapes are ripe, the healthiest bunches are picked up and chosen to be wither two by two. In the carnival days the withered grapes are pressed and after a short defecation the must is put in small kegs, where it will stay for 3 years to ferment and reach the right flavour.
